Conventional air-blast type freezers simply refrigerated food by blowing cold, dry air onto the food at high speed. This resulted in food surfaces losing moisture. High-humidity cold air [3D cold air makes high-quality refrigeration possible
In slow freezing, the passing speed of the ice-crystal formation temperature range (0 to -5˚C) at which water turns into ice is slow, so the ice crystals become greatly distorted. This causes damage to the cells of the food, and is a cause of drips when the food is thawed. The KOGASUN 3D Freezer®︎ uniformly and rapidly refrigerates food to envelop it with high-humidity cold air [3D cold air], so the ice crystals are small and do not become distorted. Moreover, because the ice crystals are small, thawing is quicker.

There is little loss after freezing when using the KOGASUN 3D Freezer®︎ because food moisture isn’t lost thanks to the high-humidity cold air. There is no need to increase the amount of raw materials to freeze food.

The structure allows for little frost formation, so the number of times you need to defrost is lower, and that improves the efficiency of long-term operations compared to the conventional refrigeration systems. This uses a non-throughflow heat exchange method (ACVCS) so there is no cold-air recirculating duct inside the refrigerator. The entire system can easily be cleaned. There are no dead corners when cleaning, so there are no hotbeds for bacteria. This ensures high safety without the need to implement bacteria controls.
